PROTEN CREPES WITH FRESH STRAWBERRIES

INGREDIENTS
- 2 scoops
- 1 cup sparkling water, divided
- 1 cup all-purpose flour
- 1 Tbsp cornstarch
- 1 Tbsp sugar substitute
- 1 cup unsweetened almond milk
- 3 Tbsp coconut oil melted, divided
- Optional: Fresh strawberries & vanilla coconut yogurt, for serving
DIRECTIONS
- Combine protein powder and ¼ cup sparkling water in a bowl. Whisk until fully combined. Set aside.
- In another bowl, whisk together flour, cornstarch, and sugar substitute. Add the protein powder mixture, the remaining ¾ cup sparkling water, almond milk, and 2 Tbsp coconut oil and mix until smooth.
- Heat 1 Tbsp coconut oil in a non-stick pan over medium heat.
- Pour ⅓ cup of the batter onto pan. Lift and slightly rotate pan, moving the batter into a thin circle.
- Cook batter until it sets in the middle, about 2 mins.
- Use a rubber spatula to carefully flip the crêpe over and cook for 30 more secs.
- Remove from pan and repeat with the remaining batter.
- Top with fresh strawberries and coconut yogurt and enjoy!
